SIMPLE FUDGE

 

INGREDIENTS

AMOUNT

Bittersweet chocolate Couverture, chopped-26 oz

Butter-2 ½ oz

Sugar-24 oz

Cream-10 oz

Glucose-6 oz

Yield: 3 loaf pans 1” deep

 

PROCEDURE:

1.  Melt chocolate and add butter.

2.  Boil sugar, cream and glucose to 240˚, remove from heat and shock.

3.  Stir chocolate mixture into softball sugar, mix by hand, stir until slightly thickened but
     DO NOT over mix.

4.  Coat the inside of a loaf pan with whole butter; pour the fudge mixture into the pan 1” deep.

5.  Allow fudge to set.

6.  Cut in to squares 1½” x 1½”.
